Baking and Desserts









INGREDIENTS

  • 1/2 cup Walnuts, chopped
  • 3 large Free Range Eggs
  • 1/2 cup Flaked Almonds (plus extra for top)
  • 1/2 cup organic Mixed Dried Fruit
  • 1/2 cup pitted and chopped dates
  • 2 teaspoons gluten free Baking Powder
  • Juice and zest of 1 large Orange
  • 1/4 teaspoon Vanilla Powder
  • 1/4 teaspoon ground Nutmeg
  • 1 teaspoon ground Cinnamon
  • 1 & 1/4 cups Almond Meal


METHOD

  1. Pre-heat fan-forced oven to 180°C.
  2. In a mixing bowl combine eggs with orange zest and juice.
  3. Mix in remaining ingredients and combine well.
  4. Pour mixture into a lined small loaf tin or cake tin.
  5. Sprinkle extra flaked almonds on top. Cover loosely with a piece of baking paper to stop almonds from burning. Remove after 1/2 way of cooking time.
  6. Bake in oven for 35 - 40 minutes or until cooked through and lightly golden on top.
  7. Hints: Use a combination of dried fruits for a fun variety of sweet bursts of flavour. If you don't have flaked almonds you can also use 1/2 cup of chopped almonds or nuts of choice. You can make this moist Christmas cake in advance and store in refrigerator.
